There’s always been confusion between Pulao and Vegetable Biryani. Though they look very much similar, you will notice the dissimilarities too when you pay close attention and try both the dishes. Origin 

The Biryani has its traces in the Indian subcontinent in countries like Turkey, Pakistan and Afghanistan have similar recipes. It was introduced in India by Mughals and since then Indians have been relishing this delicacy. But Pulao originated in Central Asian countries. 


Cooking Process 

The cooking process for both Biryani and Pulao differs as the main ingredient, rice, is cooked differently. In biryani, the rice is cooked by draining the water. It is half-cooked in boiling water and then drained to be layered in Biryani and cooked completely on slow heat. On the contrary, the pulao rice is made with vegetables in water without draining it. 

  

Layering 

Biryani is popularly cooked by making layers of additives like vegetables, rice, spices, and fried onions. But in Pulao, everything like rice, vegetables, and spices go into the pan together and are cooked at once by adding some water. 


Spices required

The spices that are required to cook Biryani comparably differ in quantity and variety. Biryani needs flavorings like coriander, cloves, peppercorns, nutmeg powder, cinnamon, star anise, bay leaf, cardamom, and saffron, etc. These spices are used to evoke aroma and flavors in Biryani. On the other hand, the basic seasonings like chili powder, coriander powder, turmeric, and peppercorns would suffice to cook Pulao 


Cooking Time 

Biryani takes a lot of ingredients that need time to be prepared. Also, it is cooked on slow heat to bring out the aroma and flavor from spices and vegetables. Whereas pulao doesn’t require too much preparation and can be cooked on high heat. This is why Biryani takes a longer cooking time than Pulao.
