Ingredients Required
2 cups medium-sized paneer cubes
1 cup hung yogurt (or Greek yogurt)
½ cups diced capsicum (same size as paneer)
½ cup diced onions (same size as paneer)
1 tbsp ginger and garlic (crushed)
1 lemon juice
1 green chili (finely chopped)
2 tbsp cooking oil
Salt to taste
1 tsp red chili powder
½ tsp cumin powder
1 pinch turmeric powder
1 tbsp fenugreek powder
Cooking Method
Take a bowl and add all the spices including, red chili powder, cumin powder, turmeric powder, fenugreek powder, and salt into it. Now add the ginger-garlic paste and green chili with lemon juice and yogurt. Blend it well until you get a smooth and thick paste.
Add the paneer cubes into the marinade and smear the cubes well. Transfer the paneer to another plate. Add in the capsicum and onions in the remaining marinade to coat them as well.
Let the paneer and veggies marinate for ½ to 1 hour and skewer them. You can also skewer them and then leave it all to marinate to avoid tearing the paneer cubes.
After half an hour, set the oven to preheat, place the skewers into the oven and let it roast for 5-10 minutes by shifting the skewers every 2-3 minutes so the paneer and veggies are cooked from all sides. (You can roast/cook them on the barbeque as well)
Once the veggies and paneer have burnt on the edges, take them out and serve hot with onion rings, sliced lemon, and mint chutney.
