Ingredients Required
2 cups crumbled paneer (Indian cottage cheese)
1 tbsp ginger-garlic paste
2 onions (chopped)
2 tomatoes (chopped)
1 green chili (chopped)
Indian spices (red chili powder, coriander powder, turmeric powder, Indian all-spice powder)
Salt to taste and oil for cooking
1 tsp cumin seeds
¼ cup of fresh coriander (washed and chopped)
Cooking Method
Take a pan, pour 2 tbsp oil in it and let it heat. Add cumin seeds and let them crackle in the pre-heated oil.
About a minute later, add chopped onions and sauté on medium heat until they turn translucent, and add chopped green chili.
Then add ginger-garlic paste and stir it on medium heat for half a minute. Add in the red and mushy tomatoes and sprinkle some salt. Cook for about 2-3 minutes on medium-low flame.
Now add all the spices like ½ tsp red chili powder, ¼ tsp turmeric powder, 2 tsp coriander powder, ½ tsp Indian all-spice powder, and give it all a nice mix. Let it cook for 2 more minutes.
Add the scrambled paneer in, along with some more salt as per your taste. Stir and let it cook for 2 minutes so the paneer turns soft and mixes well with the onion-tomato masala.
Turn the heat off and sprinkle chopped coriander. Enjoy hot with the bread of your choice.
