Cook the vegan restaurant-style Matar Mushroom at home.

Matar Mushroom is one of the signature vegan dishes in Indian restaurants. The creamy sauce made with an onion-tomato base and nuts like cashews tastes delicious when combined with peas and mushrooms. It’s an easy curry that you can make for a quick lunch or an addition to your full vegan dinner.

The best thing about this dish is it goes perfectly well with both rice and bread. You can make it with minimal ingredients you have in your pantry. Having several versions of the traditional Matar Mushroom recipe, you have the option to give your version a dry, saucy or curry-like consistency.

Since the recipe is tasty, easy to cook and extremely healthy, why not make it yours today. Let’s follow the recipe.

Ingredients Needed

  • 1 lb mushrooms (sliced)

  • ½ cup peas

  • 2 onions + 8 cashews (blended)

  • 2 tomatoes (puree)

  • 1 ½ tbsp ginger-garlic paste

  • 1 green chili (finely chopped)

  • 1/2 tbsp cumin powder

  • ¼ tsp turmeric

  • 1 tbsp coriander powder

  • 1 tsp chili powder

  • ½ tsp garam masala

  • ½ tbsp crushed kasoori methi

  • Oil for cooking

  • Salt to taste

Cooking Recipe

  1. In a pan, heat like 2 tbsp of oil and add ginger-garlic paste, let it sizzle for a few seconds and then add ground onion and cashew mixture. Keep stirring it for the next 3-4 minutes on medium-low flame and add the tomato puree when the onions turn golden.

  2. Now add in green chili. Stir the mixture and add all the ground spices - red chili, turmeric, coriander, cumin and salt. Cook the masala continuously by stirring it until you see the mixture leaving oil.

  3. Add sliced mushrooms and peas and fold them together into the prepared masala. Stir it for 2-3 minutes and then add a cup and a half of water into it. Cover the lid of the pan and let it cook on low heat for 5-7 minutes.

  4. If your mushrooms and peas are cooked and soft, add garam masala and let it simmer for another 2 minutes with the lid uncovered.

  5. Now crush the kasoori methi between the palm of your hands and sprinkle it over the curry. Give it a nice stir and it’s done.

  6. Serve it in a bowl and eat it with rice, naan or roti.
