Ingredients required

  • 1 Large cauliflower (roughly cut into medium pieces)

  • ½ cup all-purpose flour

  • ¼ cup cornflour

  • 1 tsp black pepper

  • ¼ tsp red chili powder

  • 1 small onion (chopped)

  • ¼ cup spring onion rings

  • ¼ cup green bell pepper (chopped)

  • ¼ cup carrots (thinly cut or grated)

  • ¼ cup fresh cabbage (chopped)

  • 1 tbsp ginger (crushed or chopped)

  • 2 tbsp garlic (crushed or chopped)

  • 3 green chilies (finely chopped)

  • 2 tbsp soy sauce

  • 1 tbsp red chili sauce

  • 1 tbsp schezwan Sauce

  • 1 tbsp tomato sauce

  • 1 tbsp vinegar

  • Salt to taste

Cooking Method

Step 1 - Soak the diced cauliflower in the saltwater for 10 minutes and wash and rinse after that. Prepare a batter in a bowl by combining all-purpose flour, cornflour, ¼ tsp black pepper, salt to taste, and red chili (Make sure there are no lumps in it). On the other hand, heat oil in a pan for frying. Now take a cauliflower piece, dip it into the batter and leave it in oil for deep frying. Do the same with other cauliflower pieces one by one.

Step 2 - Set the fried cauliflower aside, and put another pan on the flame. Add 2 tbsp oil and then chopped ginger, garlic and green chilies. Sauté for a minute. Now add all the vegetables including onion, spring onions, carrots, green bell pepper, and cabbage. Cook on high flame for 2-3 minutes.

Step 3 - Once the vegetables are soft, add spices including red chili, black pepper and salt with all the sauces like Schezwan sauce, tomato sauce, red chili sauce, and vinegar. Give the mixture a nice stir and add the fried cauliflowers. If the mixture is too dry, add 2 tbsp of water so the cauliflower is well-coated with sauces and spices.

Step 4 - Cook another 2 minutes on medium heat and then turn off the flame. Serve it hot in a bowl and garnish it with some spring onion greens. Now enjoy.
