Featured Condiment 1 - The sweet and tangy Mango Chutney
The condiments or sides are an essential part of our meals as they make our food more delicious and digestible. This is why we’ve decided to come up with a series of Indian condiments that you can learn and try at your home easily and quickly. These condiments are cooked with vinegar, oil, sugar, and salt that allows you to even store them up for the next few days of use.
So, we’re going to start with the first release of our Indian condiments recipe, which is “Mango Chutney”. It’s made with wonderful Indian spices, robust flavorings, and ripe mangoes that give it a tangy taste and pleasant aroma. It’s one of the versatile condiments that complement almost everything since it has a sweet, sour, and spicy flavor.
Now let’s get started with the recipe.
Ingredients
3 raw and firm mangoes
1 cup sugar
2 cumin
2-3 chopped hot pepper
2 tsp allspice
½ tsp turmeric
1 tsp minced ginger
1 tsp minced garlic
1 tbsp chopped cilantro
vegetable oil
Salt to taste
Cooking Method
Wash mangoes and cut them into equal pieces. Let them boil in a pan for about 30 minutes with 3-4 cups of water.
On another pan, add 1 tbsp of oil and then add garlic, cumin, ginger, and pepper. Stir for a minute or two.
Now add boiled mangoes and spices like turmeric, allspice, sugar, and salt for taste. Stir fry it on low heat for 2-3 minutes.
Add a cup of more water if your boiled mangoes are too dry and let it boil on low-medium heat for the next 15-20 minutes.
You may use a hand blender to mash the large chunks of mangoes and get a smooth sauce.
You can turn off the flame if the mangoes are mixed well with spices and the sauce is thickened.
The spicy, tangy, and sugary mango chutney is ready to be savored with several Indian dishes.
Note - Add vinegar to this and shift it into an air-tight container if you want to store it for a week.
